“The CALABASH Cookbook” by Seandel Gibson

Calabash is a colourful collection of fresh and simple, recipes. My goal is to take you on an adventure that draws upon the vibrant influences from the melting pot that is the Caribbean, from East Indian to West African, Chinese, American, and the indigenous Amerindians. When “Caribbean” and “food” are thrown together in a sentence, we tend to think “Jerk Chicken, Rice and Peas” or “Chicken Curry”, these are delicious, but they are just fragments of the whole story. My recipes range from Caribbean-style variations of well-loved and familiar foods – for example, curried dishes to Asian inspired – shrimp sushi stack- and my notable favorite, bake & saltfish, not forgetting the southern style-shrimp and crab topped salmon.

Food is the Centerpiece of all Caribbean households. No mater how many people you are entertaining, there is always something gravitating you towards the kitchen to whip up some food and there is always more than enough to go around, even with unexpected visitors, yet not a single scrap remains by the time the last person would have left your home.
